Plant sterols, when consumed in sufficient quantities, can interfere with the intestinal absorption of cholesterol thereby lowering cholesterol levels. Plant sterol esters consumed as part of a diet low in saturated fat and cholesterol may reduce the risk of coronary heart disease.
